Potatoes & Onions - Open Sandwich

Boiled Potatoes - 1 (sliced)
Onions - 1 medium (thinly sliced)
Green chilly - 2 (chopped fine)
Garam Masala - a pinch (optional)
Coriander leaves - 2 Tbsp (be generous)
Grated cheese - a little
Oil - 1/2 tsp
Salt to taste

Method:

1. Heat a pan with the oil and caramelise the onions along with a little salt and garam masala. Now add the chopped chillies and coriander and just wilt lightly. Remove.

2. On each half of the bread roll arrange - a little cheese, boiled potato slices, a sprinkle of salt, some more cheese and a portion of the caramelised onions.

3. Bake in the oven Gas mark 3 till the cheese looks melted.

4. Enjoy your b'fast sandwiches out in the winter sun with a cup of hot coffee.

I love potato bread ever since childhood but I can't find so many potato pieces in the bread anymore...and I used to love that! Your potato sandwich comes to the rescue: I can now have as many potato slices as I want with my bread :) Are those Granny Smith slices in the back? I think they would be great with the sandwich.
