Moist Vegan Chocolate Cake (with Avocado)


I like wholewheat cakes, I like cake recipes that call for no eggs or butter or milk, and off late I am intrigued by the idea of adding fruit purés to cakes. Now there is this one chocolate cake that I have baked often, it's an eggless, butterless chocolate cake, and have never been disappointed with the result. I got it off the net along time ago and don't have the source link but its a recipe I got off the All Recipes site.

This time I've just made one tiny change - I halved the oil mentioned and added some avocado purée - and it didn't make a damn difference! honestly! And the lil one couldn't stop gushing "wow bootiful caaake"!

Ingredients:
All-purpose flour - 3 cups
Unsweetened cocoa powder - 6 Tbsp
Salt - 1/2 tsp
Baking soda - 2 tsp
Baking powder - 2 tsp
Sugar - 2 cups
Vegetable oil - 1/4 cup
Avocado purée - 1/2 cup
Water - 2 cups
Distilled white vinegar - 2 Tbsp
Vanilla extract - 2 tsp

Method:
1. Preheat oven to 175 degrees C/gas Mark 4.
2. Sieve all the dry ingredients (except sugar) together.
3. Mix all the wet ingredients together in a bowl.
4. Now add sugar into the wet mix and stir.
5. Next mix the wet with the dry all at once, and beat until smooth.
6. Pour batter into a greased cake tin. Bake for 25 to 30 min. till a toothpick inserted comes out clean. (My cake took over an hour to make - I don't know what happened it could be that due to the avocado the liquid was too much - but I usually do the toothpick test and it works for me - my gas oven always gives me different timings than one listed in recipes). So if you are trying this one out - don't panic just hang around for the toothpick test.
7. Don't tell anyone there's avocado in it, I still haven't!

It tastes best after its well cooled (preferably the next day) - so be patient for the first bite. In cool weather you don't need to refrigerate it, but I did after day 2 'cos it has avocado. So keeping the cake in the fridge could do you only good.

The cake looks yummmy!!! I will give it a try sometime soon... :-) If I can't find a good avocado (which is quite a possibility here), what do I do? Any other puree I can substitute this with? Though I'd have loved to give it a shot with Avocado...

Smita - i guess you could cook apple,purée it and use apple purée. or mashed overripe bananas, or carrot purée. but if you decide not to use any of these - then u need 2/3 cup oil.

Rajani, that cake does look very good.
Nothing quite like eggless and butterless food.:) Avocado at least has good fats. And you cake has the little one's stamp of approval. They're the most difficult to please.
I have used apple sauce in cakes with some success.

Raji.... truly bootifu caaake!!!! I tried it immediately but ofcourse minus the avocado as i did not have it .... instead i used a puree of dates ... that is what i had in my kitchen ... it turned out quite well .. tasty and well appreciated . Thank you

BTW, the tadka is the key to a good urad daal. Try it with slices of ginger in the tadka. You'd love it.

Hi Alyssa, this recipe is dairy and egg free.

yes I've tried this same recipe with 2 cups wholewheat flour and 1 cup AP. It was denser (little sticky), with that typical nutty wholewheat flavour. it tastes better on Day 2. you can ice with nutella or choco sauce to minimise the wholewheat taste.
