Stuffed Zucchini Wheels

I just bought this book by Jessica Seinfeld called Deceptively Delicious, and frankly though the book has some unsympathetic ways of combining chocolate and cauliflower, I was a little disappointed because it doesn't address enjoying vegetables as they are and generally speaking the vegetarian options are too few and far between. Anyway the good thing was that it really kicked my own creativity.

NT eats most vegetables without fuss except cauliflower so I was basically trying to figure out a method to get her to eat atleast some cauliflower. I was also dying to create an edible version of a zucchini starter that I'd eaten at a fancy restaurant recently. For my version I've used the Indian zucchini.
Ingredients:
Indian Zucchini/Ridge Gourd - 1
Potato - 2
Cauliflower - 1,2 heads
Garammasala - 1/2 tsp
Chat Masala - 1 tsp plus a little for sprinkling (optional)
Chopped coriander - 1 bunch
Salt to taste
Breadcrumbs for rolling.
Oil for shallow frying.

Method:
1. Boil and mash the potatoes and cauliflower, mix together along with the masalas, salt and coriander.
2. Pare the zucchini, cut circular pieces and discard the core.
3. Now stuff each piece with the potato cauliflower mixture, roll on breadcrumbs and keep aside.
4. Heat oil in a pan and shallow fry till brown on all sides.
5. Sprinkle some chat masala over the wheels right before serving. Best eaten hot.

Cauliflower and chocolate,sounds exotic! The zucchini wheels look pretty,like the crunchy topping:)

Looks quite nice. What is Indian zucchini? The zucchini we get here looks like what is available outside the country.

I like cauliflower and chocolate too, but I'm a little sceptical about both featuring together!

What an interesting way to present ridge gourd - a dreaded vegetable when i was young 'coz it had too spongy an inside and too coarse an outside :)

OOh, and you echoed my thoughts exactly when you said, "I was a little disappointed because it doesn't address enjoying vegetables as they are" about Deceptively Delicious; I guess my objection was that it does not develop a lifelong taste for each vegetable for its own sake if we puree it and sneak it in other stuff...

Wow, that's an innovative style to cook 'peerkhangkai'. Hope this will works on with my son & daughter. It's a chore to get them to eat vegetable. Love your work Rajani ! will keep coming for more.
